We love the flavor of almost every species we catch and keep and we tend to cook our fresh fillets with very little seasoning. Nothing beats the flavor of the freshest seafood on earth! Here's a recipe for a simple and delicious broiled fillet.
4-6 fillets (any kind)
1 lemon (halved)
2 tablespoons of cold butter cut into small pieces
¾ cup plain breadcrumbs
¾ cup milk
½ teaspoon salt
1 teaspoon chopped fresh parsley
Pinch of pepper
Mix breadcrumbs, parsley, salt and pepper in a shallow bowl. Pour milk in another shallow bowl. Dip fillets in the milk and then the breadcrumbs and place fillets on a cookie sheet lined with aluminum foil. Dot each fillet with some pieces of butter and squeeze ½ lemon on them. Place under broiler on high for 5 minutes. Use spatula to carefully flip fillets. Squeeze other half of lemon on top of the fillets and return to broiler for another 3-4 minutes (or until cooked through). Serve with rice or potatoes and your favorite green vegetable or steamed sliced carrots. Serves 4-6 depending on fillet size.
